Originated in the Republic of Georgia. It has a hot, slightly sweet and bold, complex flavor that rises in intensity. Cooking will soften the heat and flavor. Great roasted!

Creole Hardneck- Rare
A rare heirloom garlic, originally from Southern France and often touted as the best garlic in world. It has a mild, Dijon mustard flavor that is highly sought after by chefs. Stores 4-6 months in cool dry conditions.
Marbled Purple Stripe Hardneck-
Originally from Eastern Germany, discovered in Moscow. Closely related to Metechi. Hot, Hot, Hot! Known as one of the hottest garlics around, especially eaten raw. The intense flavor holds up well, though the heat will diminish in cooking. Each bulb contains 4-6 Large cloves that are great for roasting. Stores 5-7 months in cool dry conditions.
Marbled Purple Stripe Hardneck-
Originates in Uzbekistan. Great bold garlic. Known to be moderately hot when eaten raw and slightly sweet when roasted. Cooking lessens the heat intensity but maintains the robust flavor. Great for roasting. Stores 5-7 months in cool dry conditions.

Porcelain Hardneck-
One of the best tasting Porcelain variities. This cultivar is known to be moderate in intensity with a mild buttery flavor. Great when eaten raw or roasted. Excellent in seafood, dips and stir-fry. Stores 6-8 months in cool dry conditions.

Artichoke Softneck-
An heirloom variety originating in Italy. Said to have more heat and better flavor than other softneck varieties. It has a lingering, full flavor that stands out in dishes. Stores 6-9 months in cool dry conditions.

Probably the prettiest of the Marbled Purple Stripes with it's brilliant purple papers. This cultivar is mild in flavor and great when eaten raw. It makes an amazing pesto, confit or stuffed olive recipe. Stores 6-8 months in cool dry conditions.
Giant Hardneck (technically part of the onion/leek family)-
Thought to have originated in the Eastern Mediterranean, Elephant garlic has a mild, sweet flavor that tastes great raw, roasted, sautéed or baked. Desired for its mild flavor, it’s a great addition to soups, sauces, and salad dressings. Bulbs can vary in size from small to softball size. Stores 4-6 months in cool dry conditions.
